Mango Smoothie

I make my mango smoothie recipe with yogurt for the protein, not for weight loss.  I use fat free Greek yogurt, which has 14 grans of protein!  I started making smoothie recipes/healthy shake recipes, for my son when he was young.  His favorite is my Chocolate Strawberry Banana Smoothie recipe, which is posted. This smoothie is a newer addition and I love it’s refreshing flavors.  I make it with orange juice and fresh mango, but you can use frozen mango instead.  It’s a healthy shake recipe, because there’s very little fat and sugar.  For added sweetness I use honey, which is a healthier choice than sugar.  The secret ingredient is fresh ginger! Recipes with ginger are always on my table and I thought ginger in a smoothie recipe would be interesting.  It’s fresh and sweet and goes perfectly with the mango and orange.  I make smoothies for breakfast, especially when I’m on the go.  It’s a great quick breakfast recipe.  Smoothies make great snacks and treats, but help me as a quick meal replacement. I make this healthy smoothie with a blender, but my son has a magic bullet blender/smoothie maker, which is perfect for a single serving. Whether you want healthy smoothies to lose weight or you just need some healthy smoothie ideas, give this a try!  It’s also a great healthy frozen drink for summer!  So, don’t make a milkshake with ice cream, make a Mango Smoothie instead! Macaroni Salad

Great pasta salad for summer picnics, parties or served with ham dinner for Easter. This is a traditional macaroni salad recipe, that you’ll find on any summer party menu. Recipes vary and some people like macaroni salad with tuna, with egg or with cheese. I’ve also seen it made with condensed milk and fruit cocktail for a really sweet macaroni fruit salad, but I like it simple, just the way my mom made it. She also made a similar macaroni salad recipe with shrimp, which is another favorite of mine, but this side dish couldn’t be easier to make. Simply toss some cooled, cooked elbow macaroni, shredded carrots, chopped celery, red onion and red bell pepper, with a creamy dressing made with mayonnaise, sugar, mustard and vinegar and you have yourself a delicious, classic macaroni salad! With Tuna or with chicken added, it’s a meal! I made this side dish for Memorial Day and it will be on the menu again for 4th of July, Labor Day and most of my summer get-togethers. I love it with my Brown Sugar BBQ Chicken, burgers, ribs or just about any picnic food!

Mexican blends cheese is used to top the cooked rice, which adds to the flavor and texture. I use fat free cheese too, so this is a healthy recipe! Winner all around! Tequila Lime Chicken

This easy grilled chicken breast recipe is full of flavor and my son thinks it’s just the best chicken for making chicken wraps and a grilled chicken sandwich!  I prefer this grilled chicken with rice. I actually have a Mexican Rice Recipe that goes perfectly with this Mexican style chicken.   I make the grilled chicken and rice, along with my homemade guacamole for a Mexican dinner night or Cinco de Mayo!  My Mexican rice recipe with cilantro, jalapeno pepper and cheese, along with some other incredibly tasty ingredients, goes perfectly with this grilled chicken.  I’m always looking for a reason to make homemade guacamole anyway and it’s great with this grilled chicken and rice.  I make a tequila lime marinade with cilantro, lime, spices, garlic, honey, jalapeno pepper and a nice white tequila. The combination smells incredible!  The skinless, boneless chicken breasts are sliced thin and placed in the marinade and then refrigerated for at least 30 minutes.  Then it’s grill time!  The marinade is cooked to make an incredible rich and flavorful sauce for the chicken.  With cilantro and lime in the sauce, along with some orange juice, for a special touch, and that white tequila, it’s just jam packed with flavor!   This is just one of those great recipes: easy to prepare and a healthy to top it off!  This chicken goes great with my Mexican Rice,  Guacamole and Tres Leches Cake!

Strawberry Rhubarb Pie Recipe

Strawberries and rhubarb are Spring and Summer fruits, that make wonderful desserts. Making the pie dough by hand helps give this fruit pie a light and crisp homemade crust.  The sweetness of the fresh strawberries compliments the tartness of the rhubarb and makes for a perfect combination.  The pie filling is simple to make and, unlike a strawberry rhubarb custard pie, is similar in taste and texture to a strawberry rhubarb crumble or a strawberry rhubarb tart recipe.  Strawberry ice cream can be used to top the pie, but I prefer vanilla ice cream or a dollop of my homemade whipped cream, as I like to keep the pie crust crisp and the ice cream combined with the rhubarb and strawberry filling, can make the crust a bit soggy.   I make strawberry rhubarb pie in the Summer most, because it’s my father-in-law’s favorite pie, with strawberry shortcake coming in second.  There’s nothing like the taste of sweet fresh strawberries, when they’re in season,  which I prefer to using frozen strawberries.   Sometimes I take a shortcut and make this a super easy recipe, by making the pie with store-bought pie crust.  With the flavor from the fresh rhubarb and strawberry filling, the pie is still over the top.  Nothing beats a homemade pie crust, from scratch and made by hand, but sometimes I just don’t have the time and although making dough in the food processor is fast, which is another option, if I’m in a real hurry, the last thing I want to do is clean a food processor!   The store-bought pie pastry dough doesn’t give you exactly the same old fashioned crispy and flaky pie crust, that’s made with butter and shortening and most importantly a light touch, but when in a hurry the premade pie dough is a good substitute.  I don’t usually make a fuss about perfect pie crust crimping and I think this rhubarb and strawberry pie and an apple pie recipe in particular, can pull off the rustic look. It  kind of adds to the whole old-fashioned Grandma’s pie thing.  It’s all about taste anyway and according to my father-in-law, besides his wife’s pie recipe, this is the best strawberry rhubarb pie around!  I just made it for his birthday and next up is my strawberry shortcake recipe, which  will be on the menu for father’s day!  It was my dad’s favorite dessert, but he also loved my mom’s coconut custard pie recipe.  Strawberry shortcake is such a simple cake, with nothing but whipped cream along with fresh strawberries, although I have seen it made with a custard filling too.  So get in the kitchen and learn how to make Strawberry Rhubarb Pie!  Also, learn How To Hull A Strawberry With A Straw and watch my demonstration video!

The Best Way To Hull Strawberries! If you’re making a recipe for Strawberry Rhubarb Pie, Strawberry Shortcake, Chocolate Strawberry Banana Smoothie or any number of strawberry recipes, hulling strawberries is something you need to know how to do.  It’s really very simple to hull strawberries or shuck strawberries, as some say, but many people just use their fingers. Ouch!  In this video demonstration, I’ll show you 2 very easy ways to hull strawberries: using a paring knife and using a straw!  Hulling a strawberry with a straw is actually a pretty neat trick, but not very practical, as most people don’t have straws laying about.  None the less, it is an easy way to get the insides out. The downside to the straw method is that you must make a hole straight through the strawberry, so it’s not good for making strawberry jello shots or cheesecake stuffed strawberries or filled strawberries with cream cheese inside or anything else. The straw method will work for most other strawberry recipe and it’s also a great way to get kids involved in preparing and cooking food. Recipes with fresh strawberries are always a treat, so watch the video, get your straw out, or your knife if you don’t want to be adventurous, and learn how to hull a strawberry!

Mom’s Best Pie Crust

This is my homemade pie crust recipe, perfect for sweet and savory pies, tarts, quiches, crostatas and for chicken pot pie crust (meat pie).  I make the pie crust by hand, instead of making the dough in a food processor, as I feel it gives me more control, which results in a light, crisp and flaky pie crust. I do make it in the food processor, if I’m in a hurry and need to make a quick pie dough, but I like making pie crust by hand for that real, old fashioned pie feel. It’s also kind of relaxing, plus there’s less clean up. Sometimes I just don’t feel like washing the food processor (I don’t put it in the dishwasher – don’t ask me why)!  Anyway, it’s really easy to learn how to use a pastry blender to cut butter into flour and clean up is simple. When I first started baking, I learned how to cut butter into flour with two knives and with a fork.  You’ll see the knife method in this recipe demonstration video, so don’t worry if you don’t even have a pastry blender.  You don’t need any fancy tools to make the perfect pie crust recipe, just a few basic items and simple ingredients.  Making pie crust with butter and with shortening, creates a pastry with buttery flavor and flaky texture, that everyone associates with the best pie crust recipe. A shortcrust pastry recipe (pate brisee) is similar to this basic pie crust recipe, but that is an all butter crust recipe or buttercrust recipe as some call it.  Rolling the dough is simple, when it’s chilled in the refrigerator, but this pie dough can also be made ahead and frozen for 3-4 weeks. I make a few pie crust designs, but basically I pinch the edges with my fingers or press the edges with a fork. Pie crust crimping and cut out designs require another video tutorial.

My Strawberry Rhubarb Pie, and Pumpkin Pie, and Apple Pie recipe are among my favorites fruit pies.  Recipes for savory pies, that I use this pie dough recipe for, include: my chicken pot pie recipe, cheese and spinach quiche recipe (Quiche Florentine), quiche Lorraine recipe, and mincemeat pie recipe/mince pie.  When I show you how to make an apple crostata, which has a very rustic look, you’ll see there’s no fuss at all with that crust.  You don’t even need a pie plate!   There are lots of pie dough desserts, so get in the kitchen & watch my pie crust recipe demonstration video and I’ll show you How to Make Homemade Pie Crust!  I must say, these Banana Chocolate Cupcakes, with mashed ripe bananas mixed with cocoa powder in the batter, make this a favorite banana dessert. Chocolate cupcakes are one of my favorite desserts.  They’re so simple and just the perfect portion, but the combination of bananas and chocolate in this cupcake recipe is fab and takes a chocolate cupcake to another level!  I top each cupcake with a creamy, smooth cream cheese frosting. The flavor from the ripe bananas combined with chocolate and that sweet and tangy cream cheese frosting are just a match made in food heaven!  I usually frost my chocolate cupcakes with vanilla buttercream frosting, although I do love them with a good raspberry buttercream frosting, but the flavors with this cupcake recipe seem go much better with cream cheese frosting. You could even make this a chocolate banana cake recipe, but you’ll have to adjust the time and temperature. This is an original recipe, so I’d have to test that.  I made these cupcakes with yogurt, instead of with buttermilk or sour cream, since it gives similar results, has zero fat and more people seem to have yogurt on hand at home. I make my cupcakes with butter and not with oil, as the oil seems to make them a bit too moist for my liking.
These cupcakes are great as is, but I do want to try them with peanut butter frosting and chocolate frosting, because I think they’d make great toppings with the banana and chocolate cake.  I saw a recipe for a banana cake with a pastry cream filling and I have a great pastry cream recipe, so that could be a winner too, but I’m all about chocolate, so this chocolate banana cupcakes recipe is at the top of the list right now!  I took these babies to a BBQ recently and they were gone in 20 minutes! That was a picky crowd too. (my husband’s side lol).  So get in the kitchen and make Banana Chocolate Cupcakes with Cream Cheese Frosting! From Scratch! It’s Easy!

Brown Sugar Barbecue Chicken

This is the best barbecue chicken recipe, without barbecue sauce, that I have ever eaten! The meat is very flavorful, and delicious, and the chicken is very easy to cook, since there’s NO BASTING involved!  I make a barbecue rub/paste, with brown sugar, garlic powder, dried thyme leaves, salt, pepper, canola oil, and store-bought barbecue seasoning mix.  Brown sugar adds a nice sweetness to the chicken and using BBQ seasoning in this recipe, adds a smoky, barbecue flavor and it’s also convenient to use to marinate chicken, meat or even vegetables.  I prefer to use chicken thighs for this recipe, as they have a lot of flavor and are naturally more juicy than chicken breast. I have made huge batches of this barbecued chicken for parties, marinating the meat for at least 6 hours or overnight, so that marinade really gets into the meat of the chicken.  If you don’t have that kind of time, I have marinated the chicken for an hour or two, when in a hurry,  and it still tastes great! My husband usually does the barbecuing on his infrared grill.  He loves grilling on that thing! The infrared cooks faster than our old gas grill and meats come out really juicy and delicious. I like serving a batch of this juicy and delicious chicken recipe with homemade macaroni salad, loaded baked potato salad and broccoli salad, among other side dishes. Leftover chicken is great to eat cold or reheated, if you have any. I sometimes use it to make barbecue chicken pizza or chicken salad.  Sooo, get in the kitchen and make barbecue chicken on the grill!  Written recipe below.

With white chocolate chips, key lime juice,  zest and coconut in the cookie dough and then topped with icing, that’s refreshingly sweet and tart, these cake-like cookies are tender with wonderful textures and loads of flavor! It’s one of the best summer dessert recipes: easy to make, can be made ahead, travels well and has that fresh citrus taste that makes you think of summer!  Desserts that can be made ahead are always welcome in my house, so these homemade, from scratch cookies will be served whenever there’s a gathering that needs a little citrus boost! There are a variety of Key Lime cookie recipes (Key West key lime pie cookies, key lime coolers, lime coolers or just key lime cookies) and white chocolate chip cookie recipes: easy recipes, no-bake recipes and the list goes on and on, but for me, the next best thing to making Key Lime Pie is this cookie recipe!  I hope you enjoy it too!  My Cranberry White Chocolate Chip Cookies recipe is another one of my favorites!  It has a hint of orange, which I love, and the wonderful textures of the dried cranberries and white chocolate chips.  Another one you should investigate strictly for scientific purposes! LOL  Soo, get in the kitchen and make these Key Lime White Chocolate Chip Cookies!  Warning!  Highly addictive!

Making easy side dish recipes can be a challenge, but this easy vegetable recipe should be on your go-to list!  Using prepared pesto sauce, makes this simple side dish easy and delicious!  I have a fresh basil pesto recipe, but I don’t always have enough fresh basil on hand to make it, so I buy prepared pesto sauce, which is quite tasty, as long as you can find a good brand.  That’s where the bulk of your flavor is coming from, so try to find one that you really like or Italian specialty stores sometimes have fresh basil pesto sauce. For vegetables, I chose to use asparagus, Portobello mushrooms, sweet onions and red and yellow bell peppers for my vegetable sauté. Vegetables that are in season or whatever you’d prefer to use will be just fine, but I really like this combination, as it looks and tastes great. The vegetables cook quickly in the pan and are still crisp, but tender and very colorful.  I serve this healthy side dish with chicken, with pasta and with fish or with shrimp.  I just made it for dinner with my Parmesan Herb Crusted Tilapia.  Yum! This rice recipe is ready in minutes and is perfect served with my Parmesan Herb Crusted Tilapia, but it also goes well with salmon recipes or other fish recipes, chicken recipes or you can add things to the rice as well.  I especially like shrimp with rice, which makes an easy and delicious entrée!   This is one of my easy side dish recipes and is made with instant brown rice.  You can use long-grain rice, white rice, wild rice or whatever you’d like, but the instant makes it quick and easy!  I make the rice with lemon zest and lemon juice to add a lot of flavor, but it doesn’t make the rice too lemony.  The fresh thyme and fresh parsley add another dimension of flavor, but you can use dried if you don’t have fresh herbs. With garlic and oil, cooking rice or just about anything tastes great!  I also make an Italian rice and peas, which has some mascarpone cheese in it and a pasta and peas with pancetta, which can be served as a side dish or entrée recipe!   I don’t want to get off track, but I have a really easy, healthy Orange Chicken recipe, with rice! The orange sauce for chicken is Fab over rice, so you might want to try that recipe too!  This rice recipe is a healthy side dish, low fat, easy to make and tastes delicious!  So, get in the kitchen and learn how to make Lemon Rice With Peas!

Herb Crusted Tilapia

Easy fish recipes, that come together fast are perfect for light dinners, especially on weeknights. My Parmesan Crusted Tilapia recipe or Herb Crusted Tilapia recipe (didn’t know which to name to choose!), baked in the oven, makes for a healthy fish dinner, that is both crispy and flavorful. Tilapia is a nice light fish, that can be prepared a number ways.  I like this tilapia recipe with lemon and herbs, Parmesan cheese and with panko breadcrumbs, along with the Italian seasoned bread crumbs, for extra flavor. It’s sort of an Italian fish recipe! Tilapia breaded without using eggs, and baked in the oven instead of frying in a pan, makes this dish a healthier choice.  I love fried fish, but it can be messy and leave the house with unpleasant odors for days!  Cooking oven fried fish or even oven fried chicken, gives you that crispness, without the clean up or nasty lingering odors.  Fish is great all year-long.  During the summer, grilled tilapia for fish tacos is delish!  I also make an easy pan seared tilapia recipe, with a lemon butter sauce. The tilapia is dusted with flour, without eggs and cooked in a skillet, on the stove, in a small amount of oil.  It’s not nearly as messy as breaded fish fillets or deep fried fish. Try this Parmesan Herb Crusted Tilapia with my lemon garlic aioli sauce. The tilapia with that cream sauce is really flavorful!  I punched up the aioli with a bit of horseradish, so it’s even more tasty. I also use the aioli sauce on my chicken broccoli parmesan fritters, so check those out too! Enjoy!

White Balsamic Vinaigrette

White Balsamic Vinaigrette

Using simple ingredients: white balsamic vinegar, olive oil, honey, dijon mustard, parmesan cheese and herbs, this is a simple, delicious and healthy salad dressing. Balsamic vinegar is different than white balsamic vinegar, as the white is sweet.  Dressings can be used for many thing and I like this one on salads with my homemade croutons (look under recipe index))  I usually use it with a spring mix salad or arugula salad and occasionally with spinach salad, although I do prefer honey mustard dressing with spinach.  This dressing is great served with chicken, drizzled on sandwiches (especially grilled chicken sandwiches!) and it can also be used as a marinade.  It’s great whether you’re on a diet and looking for low fat recipes and healthy recipe ideas or if you just want something delicious, that’s quick and easy to make. I started making this dressing, because my girlfriend and I were hooked on a store brand, Marzetti’s/Girard’s, which is really delish.  A few times our grocery stores ran out, so we’d stock up for each other when we could get it.  We love it that much!  So anyway, we both decided to start making our own and tried to crack the code for Marzetti’s! lol I think I came pretty close here, so I hope you like it.  It a sweet, light dressing, that’s low in saturated fat, due to the extra virgin olive oil and it’s quite flavorful.  The sweetness comes from the white balsamic vinegar and also because I make the dressing with honey, which is a healthier choice than sugar.  Without the sugar, it’s still sweet, but it’s guilt free!  This dressing is best when it’s made ahead, which gives the dressing ingredients a chance to mingle, but I’ve also served it immediately after making it and it was still quite good.  It’s an easy salad dressing to make and I hope you try it!  Other vinaigrette favorites of mine, which I’ll be sharing, are apple vinaigrette or fuji apple vinaigrette (like the panera bread dressing- yum!), raspberry vinaigrette and I’ve tossed around a strawberry vinaigrette dressing as well.  I’ve already shared my Caesar Salad Dressing recipe (look under recipe index), which you must try!  It’s a creamy dressing with loads of flavor and really is a delicious and simple salad dressing recipe to make!  I get plenty of compliments on it and my husband claims it’s  the best salad dressing recipe!  He’s a tough one too, so that’s saying something!  haha  He loves this one though too!  Enjoy!

Mom’s Easy Fruit Tart Recipe From Scratch! I’m mom!  lol  This is my easy fruit tart recipe with filling and glaze.  I use a delicious and simple shortbread crust recipe for this, which is easier than a shortcrust pasty recipe (pate brisee).   Mine is a press-in shortbread crust, which means no dough rolling, so no worries!  To top it off, it has a nice crisp and buttery texture, sweet flavor and a hint of citrus.  It’s just simple to make and quite good!  This fruit tart filling is made with cream cheese, heavy cream, sugar and vanilla and is a very quick and easy fruit tart filling to make, rather than a sweet pastry cream. I have a wonderful pastry cream recipe, so I’m not against pastry cream at all!  You can use that for the tart recipe if you’d like, as pastry cream goes quite well with fruit tarts, among other desserts, but it does require cooking, so it’s not quite as easy as this cream cheese filling.  If you have the time, it’ is a really wonderful filling for making fruit tarts.

To make this fruit tart from scratch, you first need to make the shortbread crust.  I have a separate video recipe for that, which will have it in and out of the oven in no time! Next I prepare the glaze for the fruit tart.  Heated and strained apricot preserves, are applied to the baked crust to seal it and also to the finished tart to give the fruit its beautiful gloss and prevent it from drying out. The cream cheese filling is then prepared and chilled, which takes only a few minutes.  Then to slicing the fruit!  I use fresh fruit for tarts, as I feel frozen fruit tends to release too much water and aren’t appropriate for this application. I use kiwi and have an easy how-to-peel-a-kiwi with a spoon video link below, so check that out!  I also use pineapple and mixed berries: blackberries, blueberries and strawberries. After you clean and slice your fruit, you put the whole thing together!  Watch the video for that!  After it’s made, either serve immediately or store in the refrigerator.  I cover mine with plastic wrap, by inserting several toothpicks around the edge and throughout the top of the tart and then tent plastic wrap over it.  After the fruit tart has made its initial presentation, I just put the plastic wrap directly on the leftovers.  It doesn’t really get messy, but for the first impression I like to be careful.  If you have a plastic cake container, that would be perfect.  Soo easy and it can be made ahead if necessary!

Fruit tarts or fruit pies, as some call this, can really be made with any fruit, so use what you prefer.  I make a delicious peach tart, strawberry tart, apple tart and chocolate raspberry tart!  I’ll share that sometime and I’m tossing around and idea for a tart recipe with white chocolate as well!  Yum!  So, you can use whatever fruit is in season and make all kinds of designs. Fruit tart decoration can be fun and there are soo many fruit tart design ideas out there to choose from. You don’t have to be artistic!  Use this design, if you have the fruit or substitute other fruits.  If you want to make another design,  google “fruit tart designs” and you’ll find loads of ideas, but I’m told my shortbread crust and cream cheese filling are the best, so be sure to use my recipes! lol  I’ve made this tart for holidays and it makes a gorgeous dessert centerpiece dessert decoration! You can also use my crust recipe and cream cheese filling to make mini fruit tarts for parties.  Small fruit tarts are so easy to make, because they only need a few pieces of fruit,  so there’s no need to make a design. Fruit Tarts are also great for summer parties, served with lunch, brunch, and just about anytime!

As you’ll see from the video tutorial, you don’t have to be a pastry chef to make a fruit tart,  so you won’t need to buy them from bakeries anymore, you can make them at home!  I used to buy my fruit tarts at Wegman’s, which is a “better” local grocery store with exceptional fresh-baked goods and whose fruit tarts are incredibly delicious and quite popular. Since I started making my own fruit tarts, Wegman’s tarts are history, because I actually like my recipe better and so does my family! We’re a pretty picky bunch, so that’s saying something!  A few people actually offered to pay me to make fruit tarts for them!  Get in the kitchen and make this fresh fruit tart!  Di  😉
