Learn How To Make Mashed Potatoes From Scratch! Easy mashed potatoes recipe!  Simple to make!

I cook my mashed potatoes by placing them in salted, boiling water.  I learned the cooking method years ago from various cook books and my mashed potatoes are always perfect!  Some people frown upon this method and prefer to place the uncooked potatoes in a pot of cold water, but renowned chefs Jamie Oliver and Heston Blumenthal both put their potatoes into boiling water, so it’s simply a different method of boiling potatoes. In fact, old Betty Crocker cook books actually have mashed potato recipes using this cooking method.

When making mashed potatoes, hand mashing or using a food mill or potato ricer is the preferred method. I’ve never done it that way and my potatoes have always turned out great, but I’m careful not to over beat them or the result will be gummy potatoes, so use your discretion when choosing the method. It’s also important to drain potatoes thoroughly after boiling, as excess water can result in sticky potatoes.  After draining, I return the potatoes to the pot and toss them gently over low heat, to dry any excess water.

When making many side dishes for a meal, like Thanksgiving, Christmas or Easter, I usually make my mashed potatoes first, transfer them to the serving bowl and pop them in the microwave out of the way. This way, there’s one less pot on the stove, so everything else has room to cook and my potatoes are already done.  Just before serving, I reheat the potatoes.  Stir the potatoes gently, then turn the microwave on high and heat for 1-2 minutes and gently stir again. Repeat heating and then stirring, until the potatoes are heated through.   I’ve done this for many years and my potatoes always come out great and with no rushing around at the last minute.

Chocolate Buttercream Frosting Recipe for cupcakes, icing cake, brownies, decorating.  Best, quick and easy chocolate frosting recipe/icing recipe with cocoa powder, powdered sugar (icing sugar), milk, butter and vanilla. It’s an easy chocolate icing recipe to work with and I think it’s the perfect chocolate frosting for piping roses! A bakery-style or Swiss buttercream frosting is made with eggs and shortening.  This recipe is very creamy, delicious and made without shortening and without eggs! The recipe is sometimes called an American buttercream frosting, confectioner’s frosting or just simple buttercream frosting. Homemade Chocolate Frosting from scratch, made from cocoa powder and with powdered sugar and of course with butter, can be whipped up in minutes!  No need to buy canned frosting ever again! Making homemade frosting for cake, cupcakes and desserts is simple and during the holidays adds a special touch. My family loves this icing and it’s always on something on my dessert menu. I make my raspberry buttercream or vanilla buttercream frosting, topped on old fashioned chocolate cupcakes or vanilla cupcakes.  I love this chocolate buttercream frosting on vanilla cupcakes, banana chocolate cupcakes or vanilla cake. Well, really I love it on a lot more than that and especially on a spoon!  It’s also a great piping frosting for decorating cakes, cupcakes, cookies and many desserts. There’s nothing like pumpkin pie made with homemade pie crust from scratch! I make pumpkin pie filling with a few simple ingredients, including my homemade pumpkin pie spice. Homemade pumpkin spice really gives pumpkin pie a special touch and making recipes with pumpkin spice is just the way to get yourself into the holiday mood. Thanksgiving dinner is just not complete without pumpkin pie! With homemade crust, pumpkin pie spices, and homemade whipped cream (almost forgot to mention that) you’ll have the best pumpkin pie ever!  The bonus is that it’s so simple to make!  Easy Thanksgiving dessert recipes, that keep the pumpkin theme going, are my pumpkin cheesecake or pumpkin cupcakes with cream cheese frosting, which are always a hit.  For more casual gatherings, like Halloween parties, pumpkin cheesecake dip is quick and easy. Recipes for breakfast on Halloween and Christmas morning are not complete, unless I have some pumpkin muffins available and make pumpkin pancakes for breakfast with my homemade pumpkin spice syrup.  I just go pumpkin crazy!

How To Make Candy Apples From Scratch At Home! Quick & Simple Recipe With or Without A Candy Thermometer!

Red candy apples have been a classic, traditional halloween treat for years. Everyone loves fall apple recipes and it’s very simple to learn how to make candy apples at home.  To make candied apples from scratch, requires few basic ingredients: sugar, cornsyrup, water and red food coloring. Some people make them with cinnamon, but I prefer the basic recipe.  Red candy apples are traditional, but you can make candy apples any color.  Hot pink candy apples have got to be the prettiest I’ve seen!   I’m partial to caramel candy apples, but my hub is a hard candy lover, so these are right up his alley.

Be sure to work fast when dipping the apples, because the candy coating cools very quickly and thickens.  Look at the apple in the video that I bite into. The candy was cooling as we were filming, so it got really thick.  I had to smack it down on the counter to crack it, otherwise I would have been picking my teeth up off of the floor! Lol  Check the Notes in the recipe for more tips!

How to make the best Starbucks Pumpkin Spice Latte at Home! Learn How To Make Homemade Latte in minutes! Try this easy DIY recipe! This is sooo addictive! I’ve had the real thing and I like my version better! I use my homemade pumpkin spice blend and sometimes I make some of my homemade whipped cream, when I’m feeling exceptionally energetic in the morning, but that’s rare! I really like to sip and add whipped cream as I go, but who doesn’t?! I do the same thing with hot chocolate! After I created this recipe, I could not stop making it! Every morning I’d wake up and tell myself I was just going to have regular coffee and the next thing you know I have the can of whipped cream in my hand and this crazy look on my face! PSL crazy! It is soo good! Btw, I made the foamy steamed milk in the microwave and then frothed it with a blender, but you can heat the milk in a pot on the stove and froth it, by using an immersion blending stick or hand whisk. You can also buy a hand pump milk frother, so you can make a real frothy latte without a machine anytime.

I love when I can sneak some chocolate into a recipe! Mom’s best homemade chocolate chip scones are quick and easy to make and go perfectly with a cup of coffee, tea or a glass of milk. A scone is a quick bread and these scones are a cross between a biscuit and a cake or muffin. They have a slightly crisp exterior and a light and tender interior, as long as you handle the dough properly. The key to making tender scones is having cold ingredients, especially cold butter, and a light touch.  I place my cut up butter in the freezer for about 20 minutes before I make scones.  I also leave my wet ingredients: cream, milk or buttermilk (depending on the recipe) vanilla and eggs in the fridge, until I’m ready to use. If it’s blueberry scones, pumpkin, banana, cranberry orange scones, strawberry or raisin scones, those ingredients get chilled too.  If it’s exceptionally warm in the house, I also put my vanilla, chocolate chips and dry ingredients ( flour, sugar, salt, baking powder and baking soda) in the freezer for a few minutes to chill them. Even if you have air conditioning, the interior of cabinets can become very warm in the heat of summer, especially those that sit along an outside wall, so pop those ingredients in the fridge for 30 minutes or the freezer for 15 and you’ll be happier with your results.  The only other advice I have is to be gentle.  Overworking the dough will make it tough.  Just watch and see how to do it!  It’s easy!  Note: Unlike my scone recipe, traditional English/British scones, as well as Irish or Scottish scones, are usually made without eggs and are typically served with clotted cream and jam.
