Ready in minutes! Easy Pan Seared Salmon Recipe with Lemon Butter Sauce!

Easy fish recipes, that come together fast are perfect for dinner, especially on a weeknight. This simple fish recipe has few ingredients, but tastes absolutely delicious! Pan searing salmon in a cast iron skillet gives the fish a slightly charred exterior and also helps make the skin extra crispy.  The salmon fillets are dusted with flour, without eggs and cooked in a pan, on the stove in a small amount of oil.  It’s not nearly as messy as breaded fish fillets or deep-fried fish.  Cooking the salmon fillets with the skin on allows the fish to cook through, while keeping the meat moist.  You don’t have to eat the skin, but it will be nice and crispy. So, get in the kitchen and make this delicious salmon recipe tonight or for your next dinner party and impress your guests, with very little effort.

P.S. I also have a recipe for an easy Parmesan Herb Crusted Tilapia with a cream sauce that’s really tasty! It’s another simple fish recipe: baked tilapia fillets with rice and my easy lemon garlic aioli sauce on the side.  The coating is made with Parmesan cheese and with panko breadcrumbs, along with some Italian bread crumbs, for extra flavor and crunch. Just imagine, tilapia breaded without using eggs, and baked in the oven instead of cooking in a frying in a pan! Another delicious and healthy choice!

Note on Mint vs. Peppermint:  I use peppermint extract for this recipe, but mint extract could be used. When I first starting making these cupcakes and the frosting, I tried mint extract and wasn’t fond of the flavor for this recipe, so I switched to peppermint extract. Oddly enough, after checking ingredients for the mint chocolate chips and mint chocolate candy,  I was surprised to find that most brands actually use peppermint oil or peppermint extract anyway.  They should really just call them peppermint chocolate chips!  Right?   Anyway, use your discretion, but I would stick with the peppermint extract for this cupcake recipe, if you’re looking for that “chocolate mint” flavor that everyone loves soo much.  Btw, I also use peppermint extract in my other “mint chocolate’ recipes.

Molten Chocolate Cakes, also known as Chocolate Lava Cakes, are rich, mini chocolate cakes with a moist and chocolaty center, like hot chocolate pudding. Easy to make and the perfect dessert cake recipe for Valentine’s Day! These individual chocolate cakes go by many names: Chocolate Volcano Cakes, Molten Lava Cakes, Molten Chocolate Cakes, Brownie Lava Cakes, Chocolate Fondant (in the UK), French Chocolate Lava Cakes, and Fondant au Chocolat.  I just call them Chocolate DELICIOUSNESS!!

While taking the photos for this recipe, I ate 2 of these babies right in a row, with vanilla ice cream all over them!  I kid you not!  If I were you, I’d definitely do a test run of the recipe, to be sure of the cooking time and desired consistency.  It will also give you a reason to eat a couple of these glorious little chocolate cakes, no-questions-asked! I mean, it’s an experiment and you need to be sure it worked.  Right?  I’m sure you test alllll of your recipes anyway and you were probably taught not to waste food, so this is the perfect opportunity to simply “test” yet another recipe.  You will just have to grin and bare it.  When you scrape your plate clean, you will just be demonstrating that you are not a wasteful person.  Waste not, want not.  That’s what I was taught.   LOL Ahhhhh  You don’t need a reason! Just bake off a couple of these babies for yourself and eat the darn things like it’s nobody’s business!  Just be sure to wipe your face, if you lick the plate! That could raise an eyebrow or two.  haha  😉

The dip can be kept hot in a crock pot or slow cooker, but it usually goes soo fast, I never do!  Make it ahead, as a time saver, and then bake in the oven, until it’s hot and bubbly,  All I can say is Mmmmmm.  Get those chips out and  get in the kitchen and learn how to make this delicious and easy spinach and artichoke dip recipe!

Chocolate Meringue Cookies

Chocolate Meringue Cookies are crispy, sweet, light cookies full of chocolate flavor.  These Chocolate Meringues are made with egg whites, so they’re fat free! Meringue Cookies make a nice light dessert served alone or they can be served with an ice cream, fresh fruit or topped with whipped cream.  Also know as Meringue Kisses, these easy to make chocolate cookies are perfect for Valentine’s Day, Easter, Christmas or any holiday or party! Get in the kitchen and give them a try!

When making this recipe, it’s easier to separate eggs, while they are still cold.  Using a stand mixer or hand mixer is recommended to make meringues, as making meringues by hand with a wire whisk can be quite time consuming and exhausting! Be sure all of your utensils are very clean.  Grease or fat on utensils can prevent egg whites from forming stiff peaks. It is also best to use a metal or glass bowl, when making meringues and not a plastic bowl, which can retain residues, even if washed in a dishwasher.  Meringues do not like moisture or humidity, so be sure all utensils are completely dry and do not make meringues on a humid or rainy day.  I also make meringue cookies without cream of tartar for this recipe.  Many meringue recipes use cream of tartar to stabilize the egg whites, but I use salt instead and sometimes a bit of fresh lemon juice and I’ve never had a problem.  Since these are chocolate meringue cookies, unsweetened cocoa powder is one of the ingredients.  Some brands of unsweetened cocoa powder are gluten free, which is best to use for these meringue cookies, if you need to be on a gluten free diet.  Check with the manufacturer for ingredients containing gluten.

Baking meringues in cold weather: Based on my experience with making meringue cookies at different times of year.  I’ve noticed that using an oven that sits against an outside wall can influence the way meringue cookies bake in the colder weather.  In the winter months the oven temperature seems to drop faster, once the oven is turned off.  This makes sense, since the outside wall is much colder than an inside wall.  Although the oven itself is insulated, if temperatures outside are freezing or below, that wall can get pretty darn cold!  I know my pantry, which is also on an outside wall, can fell like a fridge when you open it on those zero degree days!  Oven experts may disagree, but I can feel the difference and my meringues tell a different story!  I’ve noticed, when baking the meringue cookies in very cold weather, that they get a crisp crust on the outside, as they should, but the inside is very compact, which could be from the temp dropping so fast, once the oven’s turned off.  Adjusting my cooking time when it’s below freezing outside and adding an extra 7-10 minutes, before turning the oven off, has helped the meringues to cook properly. So, if you have an oven on an outside wall and it’s freezing cold out, while the oven is off and hasn’t been used all day, go open the oven door and see how it feels inside and then you decide.  Mine is a chilly 60 degrees F, which is 10 degrees below room temperature of 70 degrees F!  It may just be my oven, so use your best judgment on this  one.  Leave me a comment about this cold oven issue!  I’m really curious if it’s just my oven or something I just never noticed after all these years!!

Homemade Chocolate Chip Cookies From Scratch! Easy Step by Step Recipe! Mom’s Best Cookie Recipe with semi sweet and milk Chocolate Chips! These are my son’s favorite cookies!  When he came home from school, cookies would be freshly baked and waiting for him.  Over the years, I’ve made a lot of chocolate chip cookie recipes. I’ve tried combinations of brown sugar and white sugar, eggs, unsalted butter and chocolate chips. I’ve even tried vegetable shortening, along with the butter and the texture was good, but flavor was lacking.  With a the perfect balance of ingredients, you will be able to make a delicious cookie! These cookies are light and crisp and perfect with a glass of milk!  If you prefer them a bit more soft and chewy,  then simply bake don’t bake them quite as long.  There are also instructions in my recipe for storing cookies, so you can keep them fresh longer.  Follow my step by step video recipe and you’ll learn how to make the best chocolate chip cookies! Well, that’s what my kids and my husband call them, so they must be right, for once anyway!  LOL  😉

Check out my dog at the end of the video!  He likes the cookies too! I usually bake a cookies just for him without chips..  Don’t worry, that was the only piece he had with chips and I checked with my veterinarian about this before and 3 chocolate chips won’t hurt him (he’s over 50 pounds), but a half a pound of chips could be a problem. Dark and unsweetened baker’s chocolate are more dangerous in smaller amounts though, with 5-10 times more theobromine as semi sweet and milk chocolate.  Just an FYI.
