Creme Brulee – Burnt Cream: This dessert is very elegant, but surprisingly easy to make and it’s been around for a long time too.  Don’t ask me how long, but I’ve read up on it and it’s got quite a history.  Anyway, it’s made with cream, egg yolks, vanilla, sugar and salt.  That’s it! It’s my husband’s favorite dessert and just about every time we go out to dinner he orders it.  We’ve had it in some fancy schmancy places too and guess what?  He prefers my recipe!  I think it’s not just because he thinks it tastes better, but also because he can have second helpings no questions asked!  Anyway, take a look at the video and learn how to make Creme Brulee at home and serve it at your next dinner party or on a Tuesday night!  It’s that easy and your guests will think you’re some kind of miracle worker!

Superfine Sugar, Caster Sugar, also known as Baker’s Sugar is a finely granulated sugar that dissolves easily and is perfect to make desserts, frostings, meringues, top desserts such as crème brulee, cookies, cakes and doughnuts,  among other things.   The problem is that most people, don’t usually have it in their cupboard and so the need for this substitute recipe.  Superfine sugar is quite simple to make, so no need to worry!  Just follow the directions and watch the video for a quick tutorial and you’ll have your superfine sugar in a few minutes!  I hope this was helpful.

How to Make Whipped Cream! Whipped Cream Recipe for cakes, frosting, coffee, pavlova, hot chocolate, desserts or anything you’d like!  I make it for my pudding and ice cream too! Don’t forget about breakfast!  You must try this whipped cream on my pancakes and French toast!  Yes!  Trust me!  It’s very good on pancakes and French toast!  It makes a really impressive presentation and it tastes delish!  Keep that mind for someone who deserves something a little special.  Imagine the look on their face when they see a beautiful swirl of whipped cream topping their pancakes, waffles or French toast!  Personally, I could just put it in a bowl, eat it with a spoon and call it a day!  I haven’t really done that, but I really wanted to!

French Toast, Eggy Bread, Pain Perdu (Lost Bread),  Poor Knights of Windsor, Nun’s Toast, German Toast, Spanish Toast and the list goes on!  It goes by so many different names and has been enjoyed around the world for centuries!  This simple combination of bread, eggs and milk has been madeas  a dessert, as well as a breakfast dish.  As a child my mother always topped my French Toast with some sugar, but I enjoy it now with syrup, fruit or even some whipped cream, as you see here, for a special occasion.  It’s out of this world with the whipped cream, so you have to find a special occasion in your calendar to try it!

Chicken Broccoli Parmesan Fritters

Fritters Recipe! Learn How to make Chicken Fritters with Broccoli and Cheese!  I love delicious, crispy fritters, pancakes/latkes.  Whatever you want to call them! These are soo quick and easy to make and this is a good recipe for leftover chicken and broccoli. I’ve made zucchini fritters before, which I like, but I like these much better.  I think the chicken makes it more of meal for lunch or for dinner, but you can make them as a snack or appetizer. You could even switch out the broccoli for zucchini or another vegetable, because the fritter batter or pancake batter you could call it, is simple to make.  I really like the garlic and cheese, but I think what really tops these fritters off, besides the crunchy panko breadcrumbs, is my lemon garlic aioli sauce.  It just adds such a fresh flavor and with the crispy fritters it perfect!  They kind of get me thinking about my potato latkes or potato pancakes, which I also love, but you really should try this recipe! It’s perfect for a fast and easy weeknight meal and my sons went crazy for them!

Roasted Asparagus

An easy Roasted Asparagus recipe perfect with any meal!  I’ll show you how to make roasted asparagus in the oven with only a few ingredients.  Asparagus is one of my favorite vegetables and sometimes the simplest cooking methods are the best.  If yu love asparagus, you love it roasted!  When buying asparagus, be sure the tips are firm.  If they’re old or they haven’t been tended to by the seller properly, they get dried out and shriveled and may fall apart when you touch them.  That sounds sad doesn’t it??  Thicker spears are better for roasting than very thin ones.  To cut asparagus, bend back the woody end and see where it snaps off.  Oh boy! Watch the Video!  Do this with a few pieces from the bunch to see if they’re about the same.  You can then cut the rest at about that same point or you can just snap them all off!  Have fun!

Garlic Mashed Potatoes from scratch! Easy Recipe! Learn how to make a simple, creamy, mashed potatoes recipe with garlic, using red skin potatoes. Perfect with gravy!

Try to buy potatoes that look best.  They should be firm, have a nice red color and not have too many “eyes” on them or have very deep “eyes”.  Shy away from any that wink at you!  These are HOT potatoes and are nothing but trouble!  Lol   Yeah, it was corny.  When I make mashed potatoes for dinner, I make them first.  I don’t want to be running around at the last minute whipping potatoes.  It’s not hard, but when you have things timed it can just be a pain.  I make them and then just put them in the microwave to keep warm.  Just before the meal is served, I turn on the microwave and heat them for 1-2 minutes at a time; stirring them to be sure they’re hot.

I cook the potatoes by placing them in salted, boiling water.  I learned the cooking method years ago from various cook books and my mashed potatoes are always perfect!  Some people frown upon this method and prefer to place the uncooked potatoes in a pot of cold water, but renowned chefs Jamie Oliver and Heston Blumenthal both put their potatoes into boiling water, so it’s simply a different method of boiling potatoes. In fact, old Betty Crocker cook books actually have mashed potato recipes using this cooking method.

I make mashed potatoes with milk that I heat in the microwave, so the mashed potatoes stay hot. For this recipe you can use low fat, skim milk or even cream. Garlic mashed red potatoes are my favorites, but I do make regular mashers with russet potatoes or red potatoes. It’s important to drain potatoes thoroughly after boiling, as excess water can result in sticky potatoes. With russet potatoes, as I demonstrate in my regular mashed potato video recipe, I place the cooked and drained potatoes back in the pot and toss them gently over low heat to dry any excess moisture. You can try that with this recipe if you’d like, but usually don’t and they come out fine. For mashing, I use a mixer for this recipe, but you can also do this by hand, by either mashing them into a bowl or simply leaving them in the pot. a potato rice would not be good for this recipe, as it would remove the skin, but that’s another option if using a russet or other type of potato. I’ve always used the mixer for mashed potatoes, but the preferred method is by hand, as over mixing can lead to gummy or gluey potatoes. Use your discretion when choosing the method, but I never have a problem with the mixer. My mom mashed them by hand and many times there were lumps, which I hated, but red potatoes are pretty creamy, so you should be fine.  Add more milk or butter to taste, but only a little at a time.

Serve mashed potatoes topped with some delicious gravy! I have a homemade gravy for turkey and chicken recipes, that’s divine and can be made ahead, so that’s what I serve for Thanksgiving or when I just make a simple roasted chicken.

Then there’s my Mushroom Gravy, that I also call a Mushroom Sauce, which is over the top and perfect with mashed potatoes!  I made it with these potatoes and a pan seared Filet Mignon, which I served along with some Roasted Asparagus and it was heaven! We also had Caesar Salad with Homemade Croutons that night! (I have recipes for everything, so don’t worry)  My Hub was a happy camper that night and you wouldn’t believe how simple and easy it was to make everything! A really great idea for Valentine’s Day Dinner or any special occasion.
