Mom’s Quick Shortbread Cookie Crust Recipe for Fruit Tarts, Pies and desserts. Press-in crust and NO EGGS! I love this shortbread crust with my fresh fruit tart recipe! It’s incredibly EASY! Apple pie with shortbread crust is a good combination too, but this crust goes well with lemon bars/lemon squares, pecan pie, pumpkin pie, chocolate tart and can be adapted for mini tart shells for desserts of all kinds. Since this is a press-in tart dough recipe, so there’s no kneading or rolling, as with some pie crust recipes. A sweet shortcrust pastry recipe, Pate brisee, has a more delicate crust with more butter, than this shortbread cookie crust recipe, although shortcrust pastry fillings are pretty much the same. This crust requires little handling and you can make the recipe by hand or in a food processor. Making shortcrust pastry by hand is similar, but shortcrust dough is usually rolled and then placed into the pan. A shortcrust pastry tart or shortcrust pastry pie, as they are called, is basically the same idea, except not as firm as a shortbread tart. Once the shortbread crust ingredients are combined (flour, powdered sugar, salt, butter, and for this tart shell crust recipe, orange zest for a flavor boost) and pressed into the tart pan, they are chilled slightly before baking. Baking a chilled crust helps lesson shrinking of the dough. The result is a cookie-like crust that will remind you of a Lorna Doone or Walkers shortbread cookie, but better! Chocolate Strawberry Banana Smoothie
I make my smoothie recipe with yogurt for the protein, not for weight loss. I use fat free Greek yogurt, because it has 14 grams of protein! I started making smoothies recipes or shakes recipes, as I call them, for my youngest son when he was in grammar school. Although a strawberry banana smoothie is good on its own, he wanted the chocolate flavor in there and chocolate syrup was what I first added to get that, then I remembered Ovaltine! Well, I actually saw it on the shelf next to the chocolate syrup and couldn’t believe it! Ovaltine is a powder drink mix that has 12 vitamins and minerals and comes in malt and rich chocolate flavors and is a healthier choice that the chocolate syrup. It’s been around forever or at least since I was a kid, so that’s pretty close! lol Anyway, I knew the name, so I thought I’d give it try and he loved it! Sometimes I’d make smoothies for breakfast to go along with his french toast or pancakes for some extra nutrition. I have great pancake recipes and French Toast recipes, btw! When we were in a hurry, that would be a quick breakfast recipe! Chocolate strawberry banana smoothies were perfect, when he’d come home from school or soccer practice. He was starving, so that was his healthy beverage to go along with a sandwich. The smoothie is a meal on its own though. I love blueberry yogurt, so I’d have that on hand, but any flavor yogurt will do. Once I ran out of milk and made it with orange juice and that was actually pretty good. I think that another smoothie recipe! Strawberry Banana Orange Smoothie! I’ll have to make that one! I also love mango smoothies and pineapple banana smoothies too, so I’ll have to share my version of those. I always have strawberries and bananas and the few other ingredients on hand, so that’s my go to shake recipe. My son’s in college now, so I purchased a magic bullet for him, so he can make them just like I make healthy smoothies at home. You really need to make the smoothies with a blender and with ice or frozen fruit of some type for the right consistency. To make a smoothie without a blender, I’d imagine you’d have to just mash everything by hand, and who feels like doing that? He uses a protein drink mix now for his shakes, but I just sent him some chocolate Ovaltine for a treat. I told a woman at work about making strawberry banana smoothies for my son and she decided to start making smoothies for breakfast. She was familiar with Ovaltine, so she picked that up and instead of using fresh strawberries, she used frozen, so she didn’t make the smoothies with ice. She said she’d make them the night before work in a magic bullet blender/smoothie maker and then she’d just grab it from the fridge in the morning and drink it on the way to work. Those smoothie makers and magic bullets come with handled blending cups & lids, so it makes them very convenient for travel. Whether you want healthy smoothies to lose weight or you just need some healthy smoothie ideas, give this a try! My Famous Guacamole Recipe!
My Famous Guacamole Recipe! This is a must-have appetizer for Cinco de Mayo, Super Bowl and just about any party or anytime you want a delicious, nutritious snack, Mexican style!
I researched dozens of guacamole recipes and think I’ve found the perfect flavor combination, but it’s always good to make adjustments to your own taste. The only problem I have with this guacamole recipe is that it’s ADDICTIVE!! I ate the last batch I made all by myself!
This dip is pretty simple to put together and you only need a few ingredients. The important thing is to get avocados that are ripe. They should be firm, but give a little when pressed with your finger tips. If they feel as hard as baseballs, they’re not ripe yet, but that’s easy to fix. To ripen avocados quickly, place them into a paper bag with some bananas, apples or both. Close the bag and let it sit out at room temperature for about 24 hours. I used small lunch bags and put one avocado in each bag, with one or two bananas.
When you’re ready to make your guacamole, do not cut the avocados up, before you gather all of your other ingredients for the recipe, as the avocados my start to turn brown. Once you have everything ready, cut the avocados, remove the pit and scoop out the flesh into a bowl. The lime juice stops the avocados from turning brown, so that gets mixed in right away. To get the most juice out of the limes, place clean limes in the microwave for about 30 seconds on high power. The limes will become warm and soften a bit. Roll the limes on the counter back and forth, pressing firmly with the heel of your hand. You’ll be surprised how much more juice you get! Easy Chicken and Cheese Empanadas Recipe! No dough making! Using pie crust, these empanadas are baked not fried! Mexican style appetizers packed with flavor and ready in minutes! Perfect for Cinco de Mayo or any party or Latin/Mexican dinner night! I serve mine with sour cream, salsa and sometimes with my guacamole recipe. You can make these empanadas spicy or mild, by simply adjusting some of the ingredients. I did a little research when I decided to make these and found the origin of authentic empanadas traces back to Portugal and Spain, but they’re also popular in South America and various version can be found world wide. In Mexico, meats and mixed vegetables are used in fillings for empanadas, but they are also served with sweet fillings for breakfast or dessert. Empanadas served for dessert and breakfast are filled with pumpkin, sweet potatoes, yams, cream and a variety of fruit fillings. Meat Empanadas can be filled with chicken and cheese, pork or beef. Traditional empanadas can be served in larger form as a main dish, or smaller for an appetizer, snack or dessert. My version is a quick method without frying and is suitable for a snack or appetizer, although when I made the video for this recipe, my hub and I ate enough to be considered a main course! lol They are tasty and simple to make. I hope you enjoy them! I also enjoy chicken and cheese enchiladas and chicken and cheese quesadillas, which I’ll get around to posting. These Cinnamon Sugar Tortilla Chips are sooo addictive! They’re baked not fried so it’s a healthy snack, but I had these sweet cinnamon and sugar snacks with some ice cream and even though the photo shows just one tortilla chip, I ate about 10 chips! They would also be great with apple pie dip or my pumpkin cheesecake dip and serving them with yogurt and fruit salsa are healthy, fat free choices. These sweet, crispy chips actually remind me of snickerdoodle cookies, but with a lot less work! lol Using canola oil cooking spray instead of butter and because they are baked in the oven and not fried tortilla chips, it makes them very diet friendly and I also prefer baking, because there’s very little clean up! You could try them with corn tortillas, but I think the flour tortillas come out light and crispy with a nice flavor. I reserve my corn tortillas for nachos with cheese and my Mexican 7 layer dip or my guacamole! These cinnamon sugar snacks do make the perfect addition to a Cinco de Mayo party or Mexican dinner night with little effort, but don’t miss out on them with the ice cream! It is sooo good! You really have to try it that way! Simple and delicious! It’s ok to treat yourself with something naughty and sweet once in a while and why not go the homemade route with these babies! They’re not actually from scratch, but I’m not gonna tell anyone. After all you’re making them at home, so they are home made! lol It doesn’t get any easier than this though and when you plan a party, you have to have simple things like this on the menu. They’re good as a little snack for just any old time too though. I was enjoying them instead of popcorn, while watching a movie. My hub usually has a bowl of popcorn and puts nuts and candy into the mix. He loves his popcorn! Anyway, I hope you get in the kitchen and give these a try!

Spinach and Cheese Stuffed Shells
These stuffed shells are simple to make and I use my quick marinara sauce /tomato sauce, which makes it even easier, but you can use your homemade or prepared jar sauce. Get jumbo shells for this. You could make pasta shells from scratch, but then it wouldn’t be quite so simple now would it? So, start with the dry jumbo pasta shells and cook them al dente. To make the stuffing for the shells, you need some pancetta, which is Italian bacon, for extra flavor. This is optional, so if you’d prefer, leave it out and it will be more of a vegetarian recipe. It does add a nice smoky, salty flavor though, so add it if you can. The other ingredients you need: frozen chopped spinach, grated parmesan cheese, mozzarella cheese, ricotta cheese (part skim on the mozzarella and ricotta cheeses, if you want to make it low fat and more healthy), onion, garlic, pepper and my special ingredient, fresh grated nutmeg. It’s a mystery flavor that people with enjoy, but just won’t be able to put their finger on. It’s wonderful with spinach dishes and I especially like it in a cream sauce, like in my Chicken Florentine recipe and it’s great in this spinach and cheese filling for the shells too. You make the stuffing without eggs, compared to simple stuffed shells with cheese, as the spinach acts as a binder, so no eggs are required. check below to get the measurements and full directions for cooking the shells and the stuffing. You should really try these! I’ve gotten a lot of complements, especially from my Italian husband, who’s quite picky. He also loves when I make stuffed shells with meat (ground beef), with chicken or even with sausage, but the traditional stuffed shells with ricotta cheese is what his mother made most. I’ll share that in another episode and also the lasagna, cannelloni and manicotti recipes, as well. Until then, get in the kitchen and give this stuffed shell recipe a try!

Simple Marinara Sauce ready in 30 minutes! Learn how to make a recipe for tomato sauce, when you’re in a hurry, with canned tomato sauce, tomato paste and a few simple ingredients. This is not a traditional Italian marinara sauce or tomato sauce, as some call it, but a speedy recipe that’s perfect when you’re in a hurry and want to make a dish with marinara sauce. This is made without fresh tomatoes or canned tomatoes, but with tomato sauce and tomato paste along with some dried oregano, dried basil, garlic, onion, red wine and a few other ingredients and cooks in just 30 minutes. It’s good for things like chicken parmesan, with stuffed shells ( like my spinach stuffed shells! ) with lasagna or whenever you’d use a traditional marinara. I do prefer homemade, from scratch, marinara sauce with pasta, especailly spaghetti or penne, as I do like fresh tomatoes and for canned tomatoes the San Marzano tomatoes simply make the best marinara sauce. I do plan on using the San Marzanos in an upcoming episode. They are so delicious! I also love fresh basil, but I don’t always have both of those on hand. This sauce has lots of flavor and comes together fast, so you don’t have to worry when you don’t have fresh tomatoes or canned whole or crushed tomatoes on hand. I’ve learned a lot about Italian cooking from years of being part of an Italian family (my husband’s family). Usually tomato puree, tomato sauce or passata is used for meat sauce or bolognese sauce, but I have seen the sauce/puree and passata used to make marinara as well and that’s where I learned how to make this simple sauce. Mom’s Best Egg Salad Recipe
My recipe is for a traditional, basic egg salad. If you need to learn how to make hard boiled eggs and how to peel eggs, I have a quick video on that here on my website as well. This recipe only has a few simple ingredients: peeled hard boiled eggs, mayonnaise, mustard, salt, pepper and toast, if you’re making an egg salad sandwich. I know there are many different ways to make egg salad, but this is how I’ve been making it for years. In fact, it was served this way in my school cafeteria for lunch and when my sons when to school, they served it the same way. You can always add ingredients to my recipe to jazz it up. I’ve seen it made with relish, dijon mustard, paprika, celery, onions, green onions (scallions) and chives. Some people combine it with potatoes for potato and egg salad, which is actually pretty good, if you want potato salad. I’ve also heard of tuna egg salad, but I haven’t tried that one yet. I love a lot of flavorful foods, but when it comes to my egg salad, I like it plain and simple. Sometimes keeping it simple is best, but to each his own, as my father would say. Enjoy!

Mom’s Best Blueberry Muffins From Scratch
Making muffin recipes from scratch is much better than using a muffin mix and it’s also much easier than most people imagine. I make simple blueberry muffins with buttermilk, oil, butter, eggs, vanilla, lemon zest, flour, sugar, baking powder, baking soda, salt and blueberries. Lots of blueberries! Combining the dry with the wet ingredients in a bowl and gently mixing, ensures a light fluffy muffin. I always say my muffins want to be cupcakes! I joke about it but it’s true! These muffins have a cake-like texture compared to those that are more dense like blueberry bread. I’ve worked on this blueberry muffin recipe for while and my husband said that they are the best blueberry muffins he’s tasted! I was striving for really good muffins, but I’ll take “best muffins” anyday! I must admit they are delicious. I love the combination of lemon and blueberries in these muffins and the buttermilk in the batter, makes them light and fluffy. They are perfect with coffee and I like to pop them in the toaster and then spread them with some salted butter, but they’re just as good without it. I can’t really deem them healthy blueberry muffins, but you could use some wheat flour to change that if’d like, but they just wouldn’t be the same. Sorry. These muffins are best fresh and eaten the day they’re made, but I freeze them and pop them in the microwave to thaw and them split them and into the toaster they go. Fresh muffins again! You should try this recipe and see what you think. I’m can’t imagine that you’d be disappointed, after all my hub said they’re the best blueberry muffins and I know I tell him I’m always right, but I think I’ll give him this one! lol So, get in the kitchen and learn how to make Blueberry Muffins from Scratch!

Pancakes! Recipes & Videos: Learn how to make mom’s best, homemade, from scratch pancake recipe; Pancakes that are easy to make, light and fluffy. Old fashioned pancakes that your grandmom used to make, but BETTER! No pancake mix here! Make them at home with my simple recipe and you’ll impress yourself! I love pancakes and syrup, but my husband likes his with a pat of butter on top and bacon on the side. He’s surprisingly thin, btw and he thinks I’m the best cook in the world! Gotta luv ‘um! Sometimes I serve my pancakes with some whipped cream on top, just like my french toast and pumpkin pancakes recipes. Oh, and you’d love these with my pumpkin spice syrup, but a good maple syrup is great too, just be sure to heat it up first. The pumpkin spice syrup is easy to make and great served with the pancakes. Top them with whipped cream (I have a really nice whipped cream recipe too, btw) for a special occasion or holiday like Easter, Christmas, Thanksgiving or a birthday or anniversary breakfast. People get spoiled around here! I have a love of baking and cooking, can you tell!? When I was a kid my mom always called pancakes flapjacks. In the UK that’s a granola or cereal bar, but to an American it’s just a simple, basic pancake. Well, now you won’t have to go to ihop or use bisquick or pancake mix anymore. Now you have a quick and easy pancake recipe to make from scratch with a few ingredients: flour, eggs, milk , butter, sugar and my new ingredient vanilla extract. I just started using it and it makes them taste even better and just enhances the already perfect, fluffy batter. So, get in the kitchen and learn how to make pancakes; good old fashioned ones, from scratch, just like grandmom made! Learn how to make Deviled Eggs: Old Fashioned, “just like mom used to make”, deviled eggs! Classic, basic, traditional deviled eggs, that are perfect for every occasion, especially Easter. I’ve seen people make a deviled egg baby carriage for bridal showers! Using simple ingredients you can learn to make a traditional, old fashioned deviled egg with a creamy filling that tastes delicious and will keep guests coming back for more! Without any special tools and using mayonnaise, mustard and sometimes relish, paprika or even with bacon or with crab these deviled eggs are the perfect appetizer all year round. You can make them ahead and store them in a deviled egg tray and then place them on a decorative egg platter. The most important thing is that you hard boil them perfectly first. Learn how to make perfect hard boiled eggs that are easy to peel and have nice fluffy yolks. Many people over cook their eggs by boiling them too long, which give you a greenish yolk that can be a little rubbery. Others barely bring their eggs to a boil and end up not cooking them enough, which leaves the center of the yolk wuite yellow and sometimes a little sticky. I’ve been cooking my eggs perfectly for years, but started to wonder about these other methods, since some well know cooks and chefs were preaching various methods for how long to cook hard boiled eggs, so I decided to test a few out. I didn’t bother with the methods that were very similar to mine with cooking times within a couple of minutes, but tested those that were much shorter cooking times. I found that following the cold water method and letting the eggs sit the cover pot after boiling for between 10-15 minutes left the yolk a bit under cooked in my opinion. The yolks were a very bright orange-yellow and they were even a bit sticky at 10-12 minutes. Ewwww. I like my hard boiled eggs cooked through and reserve the sticky yolks for my overdone soft boiled egg mishhaps! I didn’t let that stop me from trying to make my deviled eggs with these sticky yolks, afterall there were some popular people telling me that this is how I should make them! I went ahead and started making my deviled eggs as I usually do, by mashing the yolks with a fork and saw how the egg yolks were just clumpling a bit. Again, it reminded me more of a well cooked soft boiled egg. I stopped right there! Why waste anymore time! I could see they were not mashing properly, so that experiment was over. After 20+ years of hard boiling eggs, I decided that my way was the best way! I sound like some kind of crazy egg boiling old lady, who’s been boiling eggs day and night for 20 years! LOL I’m not, but I just like them cooked a little more than the 10-15 minutes methods, but I’m sure there are plenty of people who will disagree. As my father would say, “to each his own”. My eggs come out with fluffy yolks that are not at all green, but are light yellow and are perfect for deviled eggs, egg salad or just for snacking. The one thing that is important is how quickly you cool of the eggs after cooking, so don’t take your time about it and get right over to the sink after that timer goes off and dump that hot water out and fill the pot with cold water or have a cold water bath ready for them and even add some ice cubes if the cold water isn’t chilly enough (like in the summer or if you’re in a warmer climate). You have to stop that cooking right away. The cold water also helps create steam between the egg and the shell, which makes for easier peeling. Be sure to start peeling the eggs from the large side at the top. That’s were you’ll find a little air pocket and you’ll make quick work of the peeling even the freshest eggs. Mom’s Pastry Cream! Pastry cream is a creamy custard with simple ingredients of milk, eggs, sugar, cornstarch in all recipes and some also add flour, salt and butter. Vanilla, lemon and chocolate are common flavors for this delightful filling. It’s really a velvety smooth pudding that’s quite quick and easy to make. Creme Patissiere or Pastry cream is used as a filling for Eclairs,Cream Puffs, Boston Cream Pie, Napoleons, Cupcakes and Cakes and lots of dessert pastries.

Profiteroles, Choux a la Creme or Cream Puffs are made from light choux pastry and filled with whipped cream, pastry cream, ice cream or whatever you choose! They are out of this world and easy to make!
I can’t get enough of these babies! I make them bite size, which is probably a mistake, because then I just keep popping them in my mouth and forgetting how many I’ve eaten! I love them any way you can serve them up. The whipped cream is light and airy and the pastry cream is rich and creamy. With ice cream and some chocolate syrup, these are over the top! I think I may try the more savory route for my next recipe and make them with some chicken salad or another filling. That would be perfect at a luncheon. Well, make sure you give these a go. They are much easier to make than you would imagine and people will think you some kind of cooking genius when you serve them these! Get your apron out and make some Cream Puffs!
